24:e januari kommer vi tillsammans med The Grid och Oatly anordna en espressotävling i vår butik på Norrlandsgatan 20! Vi kommer även att lansera vår helt nya espressoblandning Fundamental och bjuda på smarriga espressodrycker till alla gästerna! 

I tävligen kommer 8 lag om två att tävla i en s.k. "Crush the Rush" där de får ett antal espresso drycker och skall på så kort tid som möjligt leverera dessa till domarna. Snabbast vinner, men utan att tumma på kvalitet. Slarv kommer man inte undan med!

I finalheatet är det inte bara tiden som avgör utan domarna kommer även att betygsätta dryckerna på både smak och utseende, och de värdiga vinnarna kommer att gå hem med riktigt schyssta priser från Pesado, Acaia och mer!
 

Alla som inte tävlar är välkomna att komma o smaka supergod espresso, snacka kaffe, hänga med Oatly och heja på Stockholms bästa baristor!

THE THROWDOWN

• Are you ready to have the most fun making coffee you've had since that one time you served Daniel Adams-Ray and it totally made your week?
• Have you always wanted to compete in a coffee competition but the Barista Championship is to intimidating?
• Did you want to sign up to the Barista League in Helsingborg but missed out on a spot because your internet connection was slow?
 

Then do we have the event for you! In collaboration with Oatly and the The Grid Stockholm we proudly present the Fundamental Espresso Throwdown - and the launch of our new Fundamental Espresso!

We are looking for 8 teams of 2 to sign up and go head to head to win major prizes such as Acaia Scales, a Pesado Tamper, and other goodies. Whether you know just the person to compete with, or you want to grab the nearest person and make them compete with you, please email us at event@johanochnystrom.se with your team.

 

So by now you're probably wondering,

"OK cool, but how do I win all these cool prizes and show my friends I really can make good espresso?"

Well, good question.
 

The competition is 3 rounds of Head-to-Head knockout, meaning that one team goes through each round. The first 2 rounds are based on time. You will receive a "docket" with a list of drinks and how to make them. Your job is to work together as a team to make and serve these drinks in the quickest time possible while following the barista guidelines (see below). Time penalties of 30 seconds will be added for the following reasons:

• Spilled or underfilled drinks
• No latte art (minimum of a heart required)
• Shots running outside of designated time

As you serve your coffees, you will provide a Texture (i.e. silky, creamy, etc) and a Flavour descriptor (lemon, chocolate, porridge, etc) for each of the beverages.The judges will then assess the coffees based on Balance, Texture, and Flavour (see below again). The team with the highest combined score will be crowned the winners!

Barista Guidelines

The barista guidelines are a set of steps to ensure ensure no funny business when pulling the espresso. Competitors MUST:

• Weigh each dose ensuring the correct amount of coffee is used in the portafilter
• Weigh the coffee beverage when pulling the shot to make sure the shot "recipe" is fulfilled
• Tamp the shot - no old-school italian barista-ing here folks, we're using specialty coffee.

A judge will be supervising the teams to ensure that the shots run within the time and that the guidelines are followed. Failure to follow guidelines will result in a time penalty.



Final Round Scoresheet

Total of 45 points per judge for a grand total of 135 points.


ESPRESSO

Balance (__ / 10pts)
The judges are looking for a balanced espresso, with integrated flavours and pleasant sweetness. Reduced points for unbalanced bitterness or aggressive acidity.

Texture (__ / 10pts)
The Judges are assessing the accuracy of the texture descriptor and the finish of the espresso. Reduced points for dryness, quick finish, or any unpleasant textures in the coffee.

Flavour ( Y / N ) +5pts
Is the flavour descriptor accurate, yes or no. Here you either get the 5 points for being correct, or no points if you're incorrect.


CAP-OAT-CINO

Balance (__ / 10pts)
The judges are looking for a balanced oat milk cappuccino and accuracy of the flavour descriptor. Reduced points for sourness, bitterness, lack of espresso flavour (milky), or any unpleasant flavours.

Texture (__ / 10pts)
The judges are looking for smoothness & creaminess in the cappuccino, with silky microfoam. Reduced points for a water drink or lack of foam, as well as big bubbles in or lack of foam.
