Mr Mergya owns and operates this private wetmill in the local community of Wote, Gedeo Zone in Yirgacheffe. During the season he receives cherries from about 600 smallholder farmers in the surrounding areas of the station. Upon arrival all cherries sorted, to remove potential under- or overripes.
Post sorting they into pulping in a 3-disc Aagaarde pulper. Once skin and pulp has been removed the wet parchment coffee undergoes a fermentation and soaking process of about 24-36 hours, dependent on ambient temperatures. During these phases the coffee also gets graded based on density.
Where the sole ambition is to bring out only the most dense, best beans. All coffees are then dried on raised beds under the sun for about 10-15 days until they reach the desired moisture conent. This area of Yirgacheffe is famous for its clean, floral and acidity driven taste profile. And Mr Mergyas coffee is no exception. In the cup this coffee presents wonderful aromas and flavors of Jasmine, bergamotte and lemon.
